Observation: Food debris on walls; in cold units; and under the dry storage rack on the floor (potato storage). Some grease on cabinets door (inside).

Comments

- Domestic refrigerator (white): cooler at 3.9 C; freezer at -18 C.
- Domestic refrigerator: cooler at 4.0 C; freezer at - 18 C.
- Bar cooler at 4 C.
Note: As surface sanitizers alcohol and vinegar spray in use; this is not sufficient. Ensure that chlorine base (Bleach) at 100 ppm or Quat at 200 ppm are available on site. Paper test strips must be available for staff to verify the concentration of sanitizer(s).
- A new domestic dishwasher installed on site. If "sany" cycle is unavailable ensure you properly sanitize utensils and dishes during wearwashing.
- Food storage - satisfactory.
- Front area coffee station - satisfactory.
- General sanitation required improvement (see violation sections).

Recommendation:
- Upgrading of kitchen counters highly recommended.
Note: A damaged counter top near the stove is remain (as per a previous inspection); some heavily used areas of the counter tops are getting that point that required the upgrading.Caulking around the sink still required some correction.
- Ensure that staff on the kitchen has FoodSafe Certificate(s).
