Comments

-Walk-in cooler was at 4C.
-Walk-in freezer was at -17C.
-Prep cooler was at 4C (top and bottom).
-Front customer area cooler was at 4C. Fan/compressor area needs to be cleaned to improve air circulation.
-Upright coolers were at 3C.
-Temperatures are checked and recorded daily. Ensure corrective actions/secondary temperature checks are recorded if critical limits are exceeded.
-Hot holding was greater than 60C (heated to greater than 74C prior to placing in hot holding unit).
-Chicken and beef patties were cooked to greater than 74C/71C.
-High temperature dishwasher had a final rinse temperature of 78C on the dish surface (minimum 71C required for proper sanitizing).
-Handwash stations accessible and supplied with hot and cold running water, liquid hand soap, and single use paper towels.
-Quats sanitizer pails tested at 200ppm. Solution is changed every 2 hours.
-Quats sanitizer dispenser was at 200ppm.
-Deli slicer was clean and well maintained. Slicer is properly disassembled for cleaning and sanitizing after each use.
-Ice machine clean and well maintained.
-General food storage practices good at the time of inspection. Foods stored off the floor and covered. Foods in customer area protected from potential contamination.
-Dry storage food items properly stored off the floor and in good condition.
-General sanitation good at the time of inspection.
-No signs of pests noted at the time of inspection.
-Washroom clean and sanitary.
-Food Service Manager has valid FoodSafe Level 1 equivalent training - Advanced FST 3rd Edition (Exp Sept 11, 2021).
