Observation (CORRECTED DURING INSPECTION): Two bottles of sanitizer were tested at 100 ppm or less quaternary ammonium compounds (quats) sanitizer.
Corrective Action(s): Sanitizer refilled and tested at 200 ppm quats. It was determined at the time of inspection that the sanitizer dispenser is dispensing quats at 200 ppm at high water pressures. At lower water pressures, no quats were detected. Ensure that quats sanitizer concentrations are tested when refilling bottles. Ensure that quats sanitizer is maintained at concentrations for effective sanitizing (e.g. 200 ppm).

Follow up to Rpt # MBEK-AZMU3Q.

- Low temperature dishwasher was measured at 48 degrees C and 50 ppm in rinse residual at utensil surface
- Sliced tomatoes are no longer being stored on ice; they are being stored in a cooler drawer at the cook line. Internal temperature of tomatoes was measured at 4 degrees C
- In use utensils were not observed to be stored in stagnant water. Reminder to ensure that utensils are washed and sanitized at least every four hours, or as needed to limit potential cross contamination. A timer is available.
- Back door was observed to be closed at time of inspection. A sign is in place on the door reminding staff not to leave door open.
- Mop buckets were not observed to have any stagnant water. Mop buckets are emptied after each use, as stated by the General Manager.
- Floors and fans for the walk-in cooler and walk-in freezer are in clean condition.
Notes: Some debris was still observed on prep cooler covers (interior). Please ensure these are thoroughly cleaned and sanitized. Few flies observed at time of inspection. A pest control program is in place. Fly lights present in kitchen areas away from food and/or food contact surfaces/equipment.
