Observation (CORRECTED DURING INSPECTION): Food (milk, juices) stored in Foster cooler in main kitchen at 8C (hanging thermometer inside cooler was reading 43F). Manager mentioned that this cooler has history of having higher temperatures. Moved all foods to different cooler at 4C or below.

Observation: Ice machine had black mould along the surface next to where the water was moving down the trays.
Corrective Action(s): Remove the ice and discard. Follow manufacturer's instructions to clean ice machine.

Observation: 1.ALTO-Sham oven not working.
2. Foster cooler in main kitchen at 8C.
Corrective Action(s): 1. Repair oven or remove from premises. Operator intend to remove it from premises.
2. Repair the cooler so that it is 4C or below or remove from premises.
Correction date: 2 weeks.

Main Kitchen (Rose Garden):
1. Walk in cooler: 3C-4C / freezer: -18C
3. Hot holding unit: 66C-73C

- No signs of pests - report from May 2019 provided indicated 1 dead mouse caught in kitchen.
- Dishwasher high temp: 77C at the plate.
- Sanitizer: 400ppm quats at the dispenser and in the buckets.
- Food stored off the floor in dry storage area
- Cooking: fish at 88C (in oven)
*Clean the lid to dry bins and provide clean storage areas for the scoops

Aspen Grove:
1. Cooler: 4 C.
2. Freezer: -10 C

- Dishwashing done in Main Kitchen
*Clean the areas under the counter under winder: mouse droppings found
*Clean the fan guard in the cooler.

Maple Lane:
1. Ice cream freezer: -10C.
2. Cooler: 4C.

- Dishwasher not in use, dishwashing done in Main Kitchen
- Quats sanitizer at 200ppm.

Willow Servery:
1. Ice cream freezer: -15C.
2. Standing cooler: 4C.
3. Dairy cooler: 2C.

- No signs of pests
- Dishwasher high temp: 72.6C at the plate.
- Sanitizer: 200 ppm QUATS
*Cup found in sugar bin, touching food. Operator to replace with a scoop with handle stored in a way that does not cause potential contamination.

Cypress Servery
1. Dairy cooler: 4C
2. Standing cooler: 4C

- No signs of pests
- Dishwasher high temp: 79.6C at the plate
-200ppm Quats
*Ceiling materials (eg. paint, parts of the tape or drywall) peeling. Please look into getting this repaired.
*Hole noted near the "clean" side of the dishwasher. Must cover hole.

Cranberry Cottage:
-Was closed at time of inspection

- All hand sinks equipped with paper towel, liquid soap and hot & cold running water
- Staff have aprons, hair nets and uniforms

Required corrections completed as per previous inspection report:
1. Aspen room - cracked counter replaced with new one.
2. Pest control reports (copy) provided to the Food Manager for monitoring, review and input (electronic copies available for viewing on computer)
3. New traps placed in Aspen room and in storage room, Orkin also came in for pest control after the last routine inspection.
4. Hole in ceiling above "clean side" of dishpit was closed. However, it was held up by pieces of wood. **Operator to provide proper support for ceiling panel.
5. Development and implementation of new logs since January 2019: cleaning, dishwashing, temp logs noted. Did not see cooling schedules at time of inspection. **Asked operator to keep records for review instead of throwing them out.

Items with asterisks must be completed within 2 weeks max.

Operator has Advanced fst 3rd ed. management level Food Safe Training to confirm equivalency. Expiry June 21 2020.
