Observation: All sandwich prep coolers observed with food splaltter build up. Top side of cooler opposite the oven observed with food debris build up on the top side as well as the under side of the lid.
Corrective Action(s): Thoroughly clean as discussed. Top side and under side of lid to be cleaned daily.

Observation: Meat slicer observed with food debris affixed to the blade. Slicer was not used today
Corrective Action(s): Ensure staff are trained on how to properly clean and sanitize the slicer after use. Recommend purchasing a cover for the slicer to protect it after it has been cleaned.

Observation: Old mice droppings are not being cleaned in the kitchen. No droppings observed in the dining area. Pest contol contract remains in place. Traps in place.
Corrective Action(s): Thorougly clean and sanitize the entire kitchen floor underneath and behind all equipment. This includes behind the wood pizza oven. This needs to be done DAILY until the pest problem has been eliminated. This will substantially help the pest control company do its job to determine where a potenttial new breach may be originating.
Do not store trays or containers on any lower sheling until further notice.
