Observation (CORRECTED DURING INSPECTION): Mandolin slicers were found to have large amounts of food debris behind the blade.
Corrective Action(s): Ensure the slicer is properly disassembled after each use for cleaning and sanitizing. Reviewed disassembly and cleaning instructions with staff member at the time of inspection.

Comments

-Kitchen is used on the weekends. Minimal amounts of foods stored on-site.
-Main cooler was at 4C.
-Back storage cooler was at 4C.
-Back storage freezer was at -17C.
-High temperature dishwasher had a final rinse of 71C on the dish surface (minimum of 71C required for proper sanitizing).
-Handwash stations accessible and supplied with hot and cold running water, liquid hand soap, and single use paper towels. Do not use bar soap in the kitchen area - may result in cross contamination.
-Bleach sanitizer spray bottle was labelled and tested at 100ppm.
-General sanitation good at the time of inspection.
-Facility serviced by a professional pest control operator.
-No signs of pests noted at the time of inspection.
