A follow-up inspection was conducted, the following observations were made:
- Low temperature dishwasher had [Cl2] of 100ppm. Cracked tubing was replaced. Dishwasher is in working order and can be used to wash and sanitize dishes.
- There is running hot water exiting the 2-compartment faucet and the hot water tap is able to turn it off and on. Water is leaking under the sink and a bus pan is catching the water. Bar Leader informed me that the whole unit will be replaced as it is old.
- The exhaust canopy was professionally cleaned in September 2017 and will be done tomorrow, as per it's normal schedule. Ensure a service sticker is placed on the canopy after cleaning, or provide an invoice as proof of service.
- All cloths are being store in buckets of Quats sanitizer when not in use. Staff are determining what method they will be following to ensure the sanitizer is changed every 2 hours (timers, writing time on bucket, etc.).
