~ Upstairs:
- Drink fridge was below 4C, internal probed temperature was 3.3C
- Cake fridge #1 was below 4C, internal probed temperature of cake was 3.4C
- Cake fridge #2 was below 4C, internal probed temperature of pastry was 3.3C
- Ice cream freezer #1 had an internal probed temperature of -19.9C
- Ice cream freezer #2 had an internal probed temperature of -22.3C
- Kitchen prep-fridge was below 4C, internal probed temperature of pineapples (diced) was 3.1C
- Upright kitchen freezer was below -18C, products solid to touch
- Upright kitchen freezer #2 was below -18C, products solid to touch
- Thermometers present in all upstairs fridges & freezers
- Hot holding of samosas was above 60C, internal probed samosa temperature was 63.2C

~ Downstairs:
- Walk-in fridge internal probed temperature was 1.8C
- Thick pastry mix was probed for an internal temperature of 2.7C
- Thermometer was present in the walk-in fridge

General Maintenance & Sanitation:
- Two three-compartment sinks are available for manual dishwashing
- Bleach is available on-site
- Sanitizer was mixed during inspection by operator; it was measured at 200ppm bleach chlorine residual
- Ventilation hood is missing a panel; otherwise is clean (next service Oct. 20/2023)
- Downstairs dry storage is organized
- No signs of pests during inspection
- Washroom was clean & sanitary

Administrative:
- Permit is available - not but posted & decal is not up-to-date
- Temperature logs were not maintained for Aug.
- FoodSafe Level 1, or equivalent was available during inspection
- Pest control in place via Orkin; records were available

* Observed unlabelled pickled products, as per operator they were manufactured on the premises. Operator stated they were lab tested, however, records were not available during inspection. Operator is to e-mail most recent lab testing documentation to district EHO.
