Observation: Meat slicer found in poor sanitary condition.
Corrective Action(s): 1) Acquire a small brush to get in to hard to reach places
2) Remove all guards from machine. These can be washed, rinsed, and sanitized in 3 compartment sink
3) Remove oil and debris with warm soapy water & brush
4) Rinse away soapy water
5) Spray down with a 100ppm bleach solution
6) Allow to air dry

I will be back tomorrow to ensure this machine has been thoroughly cleaned.

Observation: 1) Containers in walk (bottom rack) in cooler found without lids
2) Pineapple tin open and used for storage in prep cooler
3) Rags throughout kitchen found left of various surfaces and not stored in a sanitizer solution
Corrective Action(s): 1) Ensure ALL food containers are secured with lids
2) Once you open a tin of food, immediately dispense the product into food grade containers. Never use for storage
3) Keep all kitchen rags in a sanitizer solution when not in use. This will prevent spread of bacteria, keep your rags white, and prevent bacterial growth

Observation (CORRECTED DURING INSPECTION): While driving by, and at start of inspection back door was left open
Corrective Action(s): Door must either be shut, or a tight fitting screen installed. No exceptions.

Hand sinks found with liquid soap (refilled at kitchen sink at time of inspection), and air dryers. If staff aren't using dryers, refill your paper towel dispensers with towels for convenience
Walk in cooler measured at 4C
Prep cooler measured 2-3C on bottom. Lids in place for inserts. Good
**This cooler requires some cleaning within. Please pay attention to the pipes/hoses within the lower portion of machine as they have accumulated some debris
Front standing cooler used only for pop. OK
Sanitizer on site tested in spray bottles and at 3 compartment sink at 100ppm. Good
***Please also use a rag sanitizer bucket as discussed
Walk in freezer functional
General sanitation of facility satisfactory. No evidence of pests
Receipts provided on request for poultry products found in small bags in cooler
Temperature logs on site and in use. Excellent.
Meat sauce made on site. Cooling can be done by dispensing product into shallow metal trays (no thicker than 3") and "blast" cooling in your large walk in freezer. Once product reaches 4C or below, you may transfer it to the larger buckets.
