Observation (CORRECTED DURING INSPECTION):
Dishware in the Meat Dept was not being sanitized as the chemcial dispensing unit had an empty sanitizer bottle. Staff did not replace the bottle as there was no more, however there is an alternate chemical sanitizer used in the Deli and Produce Dept.. Bacteria will not be killed on dishware.
Corrective Action(s):
Immediately use the alternative chemical sanitizer to sanitize dishware in the Meat Dept, until the pink Quats solution arrives. Train staff in the Meat Dept on the use of the alternate chemical sanitizer.

Observation:
The handwashing sink in the Meat Dept has a leaking drain pipe. Staff are using the 3-comp sink to wash their hands instead, however the sinks are being used for food prep and dishwashing throughout the day.
Corrective Action(s):
Repair or replace the drain pipe so it no longer leaks, and staff can use the handwashing sink.

Comments

A routine inspection was completed:
- Coolers 4C or colder; freezers -18C or colder; and thermometers present.
- No expired foods in use or for sale. FIFO rules being followed.
- All foods stored 6" off the floor, and separate from non-food items.
- General sanitation level is good. No signs of pests.
- Quats sanitizer in Deli and Produce Dept had strength of 200ppm.
- Hand sinks in the Deli and Produce Dept were stocked with liquid soap, paper towels, and running hot and cold water.
- All foods stored in groups to prevent cross-contamination.

ACTION
Repair/replace the leaking drain pipe under the handwashing sink in the Meat Dept.
Ensure there is liquid soap and paper towel at the handwashing sink in the Meat Dept.
Train the Meat Dept staff on the use of the alternate chemical sanitizer (Quats based too), until their pink Quats sanitizer product arrives.
