Follow-up inspection Dishwasher has been replaced with another commercial grade high-temperature dishwasher. Dishwasher final rinse temperature registered at least 71 C on the plate surface. No longer required to manually wash utensils. Quats sanitizer registered at 200 ppm. Scoops are stored outside of food.
