Observation: Dried on food debris noted on the meat slicer - not in use during the inspection. Used the previous day.
Date to be corrected by: Immediately
Corrective Action(s): Disassemble, clean, rinse and sanitize the meat slicer as per the manufacturer's instruction or as per your Sanitation Plan.
The meat slicer must be properly disassembled, cleaned, rinsed and sanitized everytime after use and every 4 hours if being continuously used. Do not store away unclean after use.

Observation: 1. Noted multiple containers of food (4 containers of cheese, 1 container of green pepper and 1 container of pita sauce) stored uncovered in the walk-in cooler.
2. Boxes of food stored on the floor in the walk-in cooler.

Corrective Action(s): 1. Provide a lid or saran wrap for all the food in the walk-in cooler. All food must be stored protected and covered.
2. Store all food products at least 6 inches off the floor.

Observation: - Dust noted on the ceiling above the drink cooler and broiler.
- Dried on food soil noted on the wall in most of the kitchen area.
- Debris noted on the floor in most of the kitchen area.
- Debris noted in the mop sink.
- Walk-in cooler: Black organic buildup noted on the ceiling; Debris noted on the floor.

Corrective Action(s): Deep cleaning is required for most areas of the food premises. Sweep, clean, rinse and sanitize all the above mentioned areas.

Observation: 4 large non-food grade containers being used to store bulk condiments - black pepper, sugar, salt.
These containers were previously used to store chemicals (exterior acrylic latex).

Corrective Action(s): Discard the bulk condiments and use approved food grade containers for food storage.
These containers are not meant to be for food storage and cannot be effectively cleaned and sanitized.
They must not be used as they were previously used to store chemicals and we cannot be sure all the chemicals have been removed prior to being used for food storage.

Observation: Operator is not on-site during the inspection. The 1 staff that was on-site during the time of inspection does not have FOODSAFE level 1 or equivalent.

Routine inspection conducted today:
- All hand wash stations accessible, equipped with hot and cold running water, liquid soap and paper towel.
- A spray bottle of chlorine sanitizer was available - 100 PPM chlorine residual detected.
- All freezer units were at ≤ -18C.
- All cooler units were at ≤ 4C.
- No signs of pests noted during the inspection.
- Permit posted in a conspicuous location.

- No signature required due to COVID-19 pandemic.
