Observation: 1. Mouldy food in standing cooler by the dishwasher.
2. Bag of onions stored on the floor.
Corrective Action(s): 1. Food was discarded. Food should be properly rotated and inspected routinely for best before and expiry dates and product quality.
2. Do not store food on the floor. All food must be stored 6 inches above the floor and in pest proof containers.

304 - Premises not free of pests [s. 26(a)]
Observation: Dead rat in trap. Rodent droppings seen in dishwashing area and on the bottom shelf directly under service window.
Corrective Action(s): Check traps daily. Remove dead rodents immediately. Clean up droppings and disinfect area immediately.

Observation: General sanitation is poor. Premises not cleaned nightly and dirty dishes/counters left overnight. Surfaces are sticky to touch.
Corrective Action(s): Premises must be kept in a clean condition. Follow cleaning schedule on sanitation plan.
Deep clean premsies by April 4, 2024.

Observation: High temperature dishwasher not working/turning on.
Corrective Action(s): Repair dishwasher so that is working and able to reach a temperature of 71 C or above during the final rinse cycle.
In the interim, manually wash and sanitize dishes.

Coolers (except cooler beside dishwasher and mini cooler) at 4 C or below.
***Note: the cooler beside the dishwasher and mini cooler were not being used for the storage of potentially hazardous foods however they should be repaired so that they are able to maintain a temperature of 4 C or below or replaced.
Chest freezer at -18 C or below.
Hand sink equipped with hot/cold running water, liquid soap and single-use towels.
Surface sanitizer in bucket registered at 200 ppm chlorine.
