Observation (CORRECTED DURING INSPECTION): Wiping cloths observed stored on top of prep table.
Corrective Action(s): Wiping cloths must be stored in sanitizer when not is use. Wiping cloths must be fully submerged when stored in sanitizer and the sanitizer changed every 2 hours. If using bleach as a sanitizer, the minimum concentration is 100ppm. If using Quat as a sanitizer, the minimum concentraion is 200ppm. An alternative is to use single use disposable paperr towels.
