Observation: Accumulation of dust on the ceiling tiles above the central food prep area in the kitchen. Dust could fall into food and contaminate it.
Corrective Action(s): Clean or replace the ceiling tiles so there is no dust. Ensure this is done on a regular basis to prevent the accumulation of dust.

308 - Equipment/utensils/food contact surfaces are not in good working order [s. 16(b)]
Observation: The handwashing sink by the dishwasher constantly drips cold water. Damp and constant moist environments will attract and harbor pests.
Corrective Action(s): Repair the handwashing sink so the hot and cold water can be fully turned on and off.

Comments

A routine inspection was completed:
- Coolers in main kitchen in all the satellite kitchens (6x) were 4C or colder; freezers in main kitchen, dry storage room and in all satellite kitchens were -11C or colder; hot holding units aboe 60C; thermometers present; and temps recorded daily.
- High temperature dishwasher had a rinse cycle temperature of 71.3C at the plate's surface as per max/min thermometer.
- Quats sanitizer in spray bottles and in cloth buckets had 200ppm strength. Test strips present and strength recorded.
- All foods stored in food grade containers; covered; labeled; date coded; foods stored in groups with proteins below RTE foods; and all foods stored 6" off the floor on racks and shelves.
- No expired foods in use. FIFO rules being followed.
- General sanitation level is good. Exhaust canopy is clean and ice machine is professionally cleaned twice a year (last time done in August 2022).
- No signs of pests. A professional pest company services the premises twice a month.
- FoodSafe certifide staff present.
- All surfaces are in good working order.
