Observation: Some old mouse droppings observed in the downstairs non-food external storage room

Temperature Controls:
All fridges at or below 4 deg C

High temperature washer 78.2 deg C at plate level -warm up the washer at least one dry cycle before placing dishware

NOTE:
Daily Log Sheets for fridges -some noted temperatures are in excess of the critical limit of 4 deg C. Workers must be taking the corrective action to ensure fridge temperatures are at or below 4 deg C -correct on the sheet to verify

Chemical Controls:
Reused wiping towels for food contact surfaces maintained in sanitizer buckets when not actively used

General Sanitation
In-Use Utensils: mixers are dishwashed at least every 4 hours
NOTE: keep utensils "business end" down when stored vertically to better prevent contamination
