Observation:
Light cover missing from light fixture above the dishwashing machine. Light covers prevent glass, from light bulbs, from falling into foods and food containers.
Corrective Action(s):
Purchase and install a light cover on the light fixture above the dishwasher.

Observation:
The ice machine door is broken and coming apart. Parts of the door could fall into the ice and be served in food.
Corrective Action(s):
Replace the ice machine door with a new one to protect the ice from contamination.

309 - Chemicals, cleansers, & similar agents stored or labeled improperly [s. 27]
Observation:
The glasswasher in the bar area had [I2] of above 25ppm. The [I2] shall be maintained between 12.5ppm-25ppm, anything higher may result in persons becoming ill from consumption of a chemical.
Corrective Action(s):
Stop using the glasswasher and call a maintenance person to service the machine and decrease the [I2] of the glasswasher to 12.5ppm. The glasswasher [I2] should be checked daily, not twice a month. Call our office to schedule a follow-up inspection once the glasswasher has been recalibrated.

Comments

A routine inspection was conducted, the following observations were made:
- Cooler 4C; freezers -18C; hot holding above 60C; thermometers present; and temp. logs taken.
- High temperature dishwasher was 75.9C (at the plate's surface) during the rinse cycle, as per the min/max thermometer.
- [Cl2] in spray bottles was 200ppm.
- Hand sinks stocked with running hot and cold water, liquid soap and paper towels.
- Food storage practices done properly. Foods stored in food grade containers; covered; date coded; in groups w/ raw animal proteins on lowest shelves w/ RTEs above them; and 6" off the floor on shelves.
- No expired food in use or for sale.
- Food handling practices done properly. Utensils used to handle food and hand washed frequently.
- Sanitation level is satisfactory. No signs of pests.

Contact our office when the glasswasher has been calibrated to 12.5ppm, a follow-up inspection will be conducted.
