Follow-up Inspection Conducted
- Refer to routine inspection report #SDHI-CSCTC5 for outstanding violations

Observations:
- General sanitation of premise has improved significantly - good job!
- All floors, walls and areas around cooking equipment have been cleaned to remove grease and food debris
- All wooden shelving and/or surfaces have been removed off site - good! Shelving has been replaced with stainless steel shelving in the dishwashing area.
- Bleach sanitizer in bucket (X2) measured at 200 ppm chlorine concentration with test strip
- 3-compartment warewashing method set up during inspection. Sanitizer measured at 200 ppm chlorine concentration
- All knives and equipment observed stored in a sanitary manner
- Back door observed closed
- Walk-in cooler measured at 2'C
- Walk-in cooler observed in good organized manner with all foods covered
- All foods observed stored at least 6 inches off the floor
- No signs of pests during inspection
- FOODSAFE Level 1 trained operator available on site during inspection
