Corrective Action(s): Manager discarded soup during the inspection. Hot holding unit settings adjusted and measured at 68C.

Observation (CORRECTED DURING INSPECTION): Old food debris observed beneath the meat slicer blade. Meat slicer not in use at the time of inspection.
Corrective Action(s): Staff cleaned and sanitized meat slicer during the inspection. Ensure the meat slicer is thoroughly cleaned and sanitized after use.

Observation: Undercounter cooler measured at 20C. No food was stored in the unit during the inspection. Technian has been contacted and will be on-site in a few days.
Corrective Action(s): Repair undercounter cooler to operate at 4C or colder. Do not use cooler to store potentially hazardous foods until inspector has verified temperature. Contact inspector once repaired.

Comments

Manager indicated the store underwent cosmetic renovations and re-opened on March 27, 2024. No change to floor plan layout - new hot holding (meatballs) well, new protein and vegetable sandwich cooler installed.

Handsink supplied with hot/cold running water. liquid soap, and paper towels.
QUATS sanitizer bucket measured at 200ppm.
Coolers (except noted violation) at 4C or below; freezer temperature satisfactory; hot holding unit (except noted violation) above 60C.
Temperature logs maintained.
Probe thermometer available on-site.
New batch of pre-made frozen soup reheated in the microwave during inspection. Temperature probed above 74C/165F.
Foods covered and stored off the floor.
No pests noted during inspection.
FOODSAFE certified staff on duty.
Permit posted.

NOTES:
1. Ensure wiping cloths are fully submerged in the sanitizing solution to prevent pathogen growth.
2. Sanitizer test strips expired - please obtain new test strips.
