ROUTINE INSPECTION. NOTE: Kitchen is only in use once or twice a week. All food is prepared on the day the kitchen is used. Kitchen was not being used during time of inspection. Handwashing stations are equipped with hot/cold running water, liquid soap and paper towels. Coolers at 4c or below. Thermometer is available. Freezer at -18c. RECOMMENDATION: ENSURE TO CLEAN FRIDGE/COOLER ON REGULAR BASIS. Hot holding unit is not in operation during time of inspection. RECOMMENDATION: ENSURE TO CLEAN HOT HOLDING UNIT AT THE END OF EACH USE. Dishwasher is not in operation during time of inspection. 3 compartment sink available for manual warewashing procedures. Bleach available for sanitizing of all food contact surfaces. No pest activity noted during time of inspection. Overall sanitation is adequate.
