Observation (CORRECTED DURING INSPECTION): Knives stored clean on knife rack observed with food debris.
Corrective Action(s): Knives removed from knife rack to be washed in two-compartment sink. Ensure knives are cleaned and sanitized completely before placing in knife rack to prevent cross contamination.

Observation: 1. Food on sales floor (various nuts) and food walk-in coolers observed stored in boxes directly on the floor.
2. Round wood log used to cut produce observed with loose wood splinters, large crack, and is not durable, smooth, or easy to clean.
Corrective Action(s): 1. Ensure all food is stored at least 6 inches off the floor to prevent the attraction of pests and prevent cross contamination.
2. Wood log was discarded. Ensure food is prepared on durable, smooth, easy to clean surfaces that are nontoxic to prevent physical and chemical contamination.
