However, unit is not in use because surrounding pipes are leaking a significant amount of water. Corrective Action(s): - Repair and/ or replace unit. Correct and eliminate water leak. Store manager states that service has been scheduled for end of March. **Pan washer must be accessible and used per Sanitation Plan. **Minimum Wash and Rinse temperatures must be achieved per unit data plate. Minimum 71C must be achieved at the plate surface (min/ max thermometer). **All bakery items must continue to be manually washed and sanitized until the pan washer is accessible for use.
