Observation (CORRECTED DURING INSPECTION): Dough mixer bowl and attachment have dry dough observed from the night before. Operator was notified and educated, and put the items for cleaning during inspection.
Corrective Action(s): Ensure all food contact surfaces are cleaned and sanitized before and after use.

Observation (CORRECTED DURING INSPECTION): Raw Lamb and Goat pieces left out to thaw at room temperature. Food was probed and was below 0C. Operator was notified and they immediately placed items in walk-in cooler. Education provided on proper thawing methods.
Corrective Action(s): Ensure thawing does not occur at room temperature. Acceptable thawing methods can be, for example, at 4C or less or with cold continuous running water over the covered food item.

Observation: Handwashing stations in kitchen and in washroom noted without single-use paper towels.
Correction: Operator to ensure handwashing stations are equipped with hot and cold running water, liquid soap, and single-use paper towels at all times during operational hours. Paper towel dispenser to be affixed to wall in washroom. Adequate supply of single-use paper towels to be available on site.
