Observation: Some evidence of mice still noted in one monitoring trap. This monitoring trap is not checked regularly according to staff.
Corrective Action(s): Continue with pest control that includes, cleaning up food spills promptly, keeping food in pest proof containers, cleaning and sanitizing work surfaces before the start of each shift, monitoring for pests, and sealing gaps and holes where pests may enter. Provide a copy of your latest pest control report from licenced pest control expert to Fraser Health Authority.

Observation: Prep cooler at front - air and food temperatures are slightly above 4 C/40F (41-44F).
Correction: Adjust or clean cooler and verify daily that all potentially hazardous foods are being stored at 4C/40F or colder.
Comments

Follow up inspection.
Items corrected:
- Cooling of hot food - is being done in a cold water bath (in sink) and then in shallow containers /small volumes in walk in cooler.
- Hand washing sink near the front service area (beside prep cooler) is working and has hot/cold water, liquid soap, and paper towels in a dispenser - good.
- Cleaning has improved. Continue to follow a written routine cleaning schedule.
- 3 door prep cooler by front area has been cleaned and is now keeping food at 39 - 42F. Adjust so that potentially hazardous foods (such as dairy and meat) is stored at 40F or colder. Note that this cooler is used mainly for lower risk food (produce, etc.).
