1) Staff unable to determine where sink plugs were. Staff not using sink plugs. Staff observed to use small, orange tub for washing purposes - CORRECTED DURING INSPECTION (sink plugs found)
2) Staff not sanitizing during washing of dishes - CORRECTED DURING INSPECTION (Staff taught how to properly sanitize dishes)

1) Obtain additional sink plugs. Only two exist for three compartment sink and one is dirty and mouldy.
2) Ensure proper sanitizing step is occurring at all times. THIRD COMPARTMENT SINK IS TO BE SET UP FOR SANITIZING AT ALL TIMES. Ensure sanitizer solution is set up in sink for proper dishwashing.

Observation: Cake preparation area is extremely tight and cluttered.

Corrective Action(s): Facility is very old and lacks extra space in upstairs kitchen needed to store broken equipment. Move all equipment so that the cake prep area can be expanded. Currently cake prep area is very small and clutter has the potential to contaminate food during preparation. CLEAN AND ORGANIZE THIS AREA AS IT IS A FOOD PREPARATION AREA.
