Observation (CORRECTED DURING INSPECTION): Chlorine concentration in the sanitizer pail (wiping rag storage) was below 100ppm chlorine concentration (~10ppm). Bleach was added to the solution at time of inspection.
Corrective Action(s): *Ensure to keep the sanitizer solution at 100-200ppm by mixing fresh solutions regularly.
*Note: Lemon-scented bleach is not food-grade. Ensure to rinse surfaces that contact food after applying the sanitizing solution. Alternatively, switch to regular unscented bleach, which does not require a rinse after application when used at 100-200ppm concentration.
