Observation (CORRECTED DURING INSPECTION): Preparation cooler close to the hand washing station measured with an ambient air temperature of 7.2C. Internal food product temperature for cold potentially hazardous food items measured at 7C. Operator stated food items in this cooler were moved from the walk-in cooler in less than 2 hours.
Corrective Action(s): Move all cold potentially hazardous food to the other preparation cooler or the walk-in cooler. Do not store any potentially food items in this cooler until it is able to maintain a temperature of 4C or lower.

Observation (CORRECTED DURING INSPECTION): Sanitizing spray bottle in the kitchen area measured with 0 ppm chlorine residue.
Corrective Action(s): Discard and refill the aforementioned spray bottle with 100-200 ppm chlorine solution. Clean and sanitize all food contact surfaces with the newly made sanitizer.

Observation (CORRECTED DURING INSPECTION): The paper dispenser for the kitchen area hand washing station was empty. No other paper towels were available near the station.
Corrective Action(s): Install a new roll of single use paper towel into the aforementioned paper dispenser.

Observation (CORRECTED DURING INSPECTION): Dry food product in bin stored with shoes under the prep table in the kitchen area.
Corrective Action(s): Non-food items must be stored away from food items to prevent contaminating the food. Move the shoe to a different location away from food items.

Observation: Rodent droppings were observed in the back dry storage area near the chest freezer and at the corner near the telecommunication equipment.
Corrective Action(s): Clean the dropping at the aforementioned areas. Spray the droppings with at least 1000 ppm bleach solution before cleaning up. Monitor the area for addtional pest activities. Correct by: today.
