Observation (CORRECTED DURING INSPECTION): Deli cooler and prep line cooler were at 8-9 deg C. Temperature log for deli cooler showed that cooler had been consistently above 4 deg C (August and September). There is no temperature log for the prep line cooler.
Corrective Action(s): Discard open meat products in the deli cooler. Large packaged deli meats (new) to be moved to the walk-in cooler (at or below 4 deg C). Some cheese, mayonnaise and other items in the prep line cooler to be moved to the walk-in cooler. Do not store any potentially hazardous foods in these two coolers are maintaining at or below 4 deg C).

Observation: Deli and prep line cooler were not working properly (8-9 deg C).
Corrective Action(s): Repair or replaced these coolers. Refrigeration units must be maintained at or below 4 deg C.

Observation: Prep line cooler was lacking an accurate thermometer inside.
Corrective Action(s): Provide an accurate thermometer for this cooler and ensure to add this to the temperature log. Temperature check to be done daily and as frequently as other coolers in the log.

Hand sink provided with liquid soap and paper towels.
Chlorine sanitizer measured >100 ppm (bucket and spray bottle).
Ice cream display freezer was at -14 to -16 deg C.
Dipper well in good working order.
Hot holding for soups was at 60 deg C or hotter.
Temperature log was available and up to date.

Provided operator with a ware washing sign (ensure to post in the ware washing area)
Storage area (next door building):
Deep freezers (2) was at or below -18 deg C.
Walk-in freezer was at -20 to -22 deg C.
Pest control in place. No signs of pests noted at time of inspection.
