Observation (CORRECTED DURING INSPECTION): Wiping rags stored on countertops throughout premises. When not in use, rags/towels should be stored in sanitizer to prevent bacterial growth.

Handsink fully stocked with hot and cold running water available.
Prep cooler: miso sauce insert 4 C, soy sauce 3 C; undercompartment 3 C.
Victory fridge 4 C. Sliding door fridge 1 C. Freezer - 21 C.
Sanitizer pail ~ 200 ppm.
Minced pork 62 C. Stove top items: spicy soup 74 C, chicken soup 71 C.
Rice cooker by handsink 92 C.
High temperature dishwasher 76 C plate level, 184 F gauge; operator verbally demonstrated minimum rinse temperature (180 F) for machine.

Front service area:
Handsink fully stocked with hot and cold running water available.
Sanitizer bucket ~ 200 ppm detectable, however spray sanitizer bottle > 200 ppm (Remember only need 1/2 tsp per 1 litre water).
Rice cooker (black top) 78 C. Rice cooker (metal top) 71 C.
Steam table: spicy teriyaki, teriyaki and curry sauce 60 C *note - all other hot holding items kept at back.
Domestic fridge 3 C. Coca cola display 3 C.

General: some spilt rice observed in back corridor dry storage area, please cleanup.
Foodsafe certified staff onsite.
No signs of pest activity noted.
