Routine inspection

-Hand washing stations supplied with hot cold running water, liquid soap and paper towels.
- Display coolers and sushi front cooler measured at or below 4C. Upright 2-door freezer measure at -21C.
- Dishwasher registered at or above 71 degree C in final rinse water.
- Hot holding for rice and soup maintained at or above 60C.
- Sushi rise PH measured being below 4.2
- General sanitation discussed. Raw wood in dry storage is to be sealed or painted so that shelve are cleanable and impervious to dirt and grease.
- Floor in dry storage is to be cleaned and maintained.
- No sign of pest activity noted at this date.
- Chlorine 100-200 ppm available in sani buckets and in spray bottle in sushi make counter. Sushi roll machine cleaning and sanitizing discussed.
