Comments

COMMENTS
- Facility in GOOD sanitary condition - improvements in storage practices have been made in back storage area and improvements made in kitchen with respect to cleanliness
- No evidence of pests
- Coolers achieving temperatures of less than or equal to 4 degrees Celsius
- Freezers achieving temperatures of less than or equal to -18 degrees Celsius
- Sanitizer solution in use throughout food preparation areas and at concentrations of greater than or equal to 200ppm Chlorine
- Two functional sink plugs available for use observed
- Ice machine and scoops in good sanitary condition
- All containers used to store lids/utensils/etc. in good sanitary condition
- Staff Personal items kept separate from kitchen equipment
- Cloths used for baking are replaced and others washed routinely

NOTE: Donair cooked meats are cooked in bakery and sold in adjacent store in freezer. As any meat cooked on a Donair requires a secondary cook step this meat must be cooked again on grill OR instructions MUST be added to frozen food item that item is not fully cooked and requires secondary cooking prior to eating. Please update packaging to include cooking instructions IMMEDIATELY.

Portions of meat sliced from the meat cone MUST undergo a secondary cook step prior to serving to ensure that sliced meat has been fully cooked. Beef or Lamb: 71°C (160°F) for at least 15 seconds. Poultry: 74°C (165°F) for at least 15 seconds.

Suggested: "Food item not fully cooked - ensure product is fully cooked to 71°C prior to eating"

NOTE: Obtain additional sink plugs as some are showing signs of wear
