302 - Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
Observation (CORRECTED DURING INSPECTION): Bleach bucket for the front prep and dessert making station had 0ppm chlorine. Both buckets were refilled with 100-200ppm chlorine at this time. Staffs were advised to have all prep surfaces sanitized at this time.
Corrective Action(s): Ensure to add 1/2 tsp of bleach per 1 L of water and have the solution available for use at all times. All prep surfaces MUST be sanitized before initiating any food prep in the morning, every 2 hours and after each possible contamination during operation.

Observation (CORRECTED DURING INSPECTION): 1) No hot water available at the front prep handwash station. Hot water was turned on again.
Corrective Action(s): Ensure all handwash stations are adequately supplied with hot/cold running water, liquid soap and paper towels at all times.

402 - Employee does not wash hands properly or at adequate frequency [s. 21(3)]
Observation (CORRECTED DURING INSPECTION): No hot water available at the front prep handwash station. Staff had purposely turned the hot water off. Hot water was turned on and staffs hands were washed properly at this time.
Corrective Action(s): Ensure to follow proper handwashing practice at all times.

Observation: Walls behind the deep frying station falling apart. Broken tiles observed on floor throughout.
Corrective Action(s): Ensure to have the wall redone, so that the surface is smooth and easily cleanable.

Routine inspection conducted:

-Handwash stations adequately supplied with liquid soap, paper towels and hot/cold running water throughout, except mentioned above.
-Coolers operating at/below required temperature of 4'C; Freezers operating at/below required temperature of -18'C
-Hot-holding for buffet station operating >60'C. Thermometers available for temperature monitoring.
-Salad/yogurt at buffet station discarded after 2 hours.
-Low temperature dishwasher achieved >50ppm chlorine at the plate level after final rinse.
-High temperature dishwasher achieved 71.1'C at the plate level after final rinse.
-100-200ppm chlorine solution available in bucket at the deep frying station and samosa making station.
-Ventilation canopy hood serviced and maintained. Next cleaning scheduled for October 2019.
-General food storage practice satisfactory throughout.
-Traps in place. No evidence of pest activity observed at this time.
-Professional pest control company contracted for monthly visits. Orkin- Recent report kept on site.
-Washroom handsinks satisfactory.

NOTE: Screen doors must be installed if to have the back doors open during operation.

General sanitation of the facility satisfactory, but could be improved by cleaning the following areas on a more regular basis:
Handles of walk-in coolers - scrub clean
Back storage area

Facility will be closed for a week for renovation for floors/walls only. Ensure all surfaces are made of non-porous, smooth and easily cleanable materials.
