Observation (CORRECTED DURING INSPECTION): Turkey roasts, eggs and potatoes were being cooled at room temperature.
Corrective Action(s):
- Foods moved into the cooler at the time of inspection.
- Food must be cooled from 60-20C in 2 hours or less and from 20-4C in 4 hours or less
- Use an ice wand for liquid foods and/or use shallow pans for solid foods for faster cooling

Observation (CORRECTED DURING INSPECTION): Ambient temperature of two coolers (Tropicana cooler and sliding glass cooler in the kitchen area) measured approximately 10C at the time of inspection.
Corrective Action(s):
- Move all potentially hazardous foods to working coolers. Foods moved at the time of inspection.
- Until the coolers have been repaired or replaced, do not use them.
- You may store creamer in an ice bath for easy access at the waitress station. Temperature of the ice bath must be monitored at all times. Store creamer in working cooler at closing.

Observation (CORRECTED DURING INSPECTION): Dipper well in the back was not running.
Corrective Action(s): Dipper well must be on at all times. Staff turned on dipper well at the time of inspection.

Observation: Rodent droppings on chemical storage shelves in the back area.
Corrective Action(s):
- Clean and sanitize areas where droppings are found with a 1:10 solution of bleach

- Store all foods in pest proof bins
- Pest control reports to be provided to inspector at follow-up inspection
