Observation (CORRECTED DURING INSPECTION): Gulab jamun and carrot cake at approximately 7-8C inside the sweets cooler. The sweets cooler was checked this morning and was at 38F, according to the temperature log.
Corrective Action(s): Sweets placed in a functional cooler at 4C or less. Ensure that all potentially hazardous foods are kept at 4C or less to prevent the growth of bacteria that could cause foodborne illness.

Observation (CORRECTED DURING INSPECTION): Sweets cooler operating at approximately 8C.
Corrective Action(s): Cooler was adjusted but only reached approximately 6C at time of inspection. Operator to call technician to ensure that the cooler maintains at or below 4C at all times. Do not use the sweets cooler until a follow-up inspection has been conducted to verify that it can reach 4C or less.

Routine inspection conducted. The following observations were made:
Only take-out area is in operation at time of inspection due to removal of existing tables in the dining area
Alterations made without submission of floor plans (see violation code 101 above)

1. Temperatures
- Walk-in cooler at -2C
- Walk-in freezer at -18C
- Prep cooler (left) at 3C (bottom) and 4C (top)
- Prep cooler (right) at 2C (bottom) and 4C (top)
- Beverage cooler (in take-out area) at 4C
- Sweets display cooler at 8C (see violation code above)
- Temperature logs are maintained and up-to-date - very good

2. Hygiene and Sanitizing
- Hand wash sink in kitchen area and in take-out area stocked with hot/cold running water, liquid soap, and single-use paper towels
- Quaternary ammonium compound (QUATS) sanitizer spray bottles present throughout facility at 200 ppm - manually diluted
- Newly acquired high-temperature dishwasher sanitizes at a final rinse cycle of 74C at the plate (Min: 71C)
- 3-compartment sink available and stocked with drain plugs
- Ventilation canopy in excellent sanitary condition
- Dough mixer hook was separated from the bowl - both are in sanitary condition
- Ice machine well maintained. Scoop is stored above unit in a container
- Mop sink available for use, separated from dough mixer via a splash guard (NOTE: splash guard to be fully affixed to the mop sink by end of day today)

3. Storage
- All items were covered when not in use - excellent
- Food products are stored at a minimum of 6" (15 cm) off the floor
- Area is maintained in very good sanitary condition
- Chemicals are stored in the mop sink area and in a designated area underneath the hand wash sink

4. Pest Control
- No signs of recent fly, rodent, or cockroach activity at time of inspection
- Mechanical traps opened did not contain any rodents
- Professional pest control company conducts monthly audits. Last inspection report by pest control company was from May 08, 2019 and did not reveal any signs of rodent activity

5. Administrative
- Permit fee already paid - facility is waiting for operating permit to arrive from the billing department
- Operator has valid FoodSafe 1
