205 - Cold potentially hazardous food stored/displayed above 4 °C. [s. 14(2)]
Observation (CORRECTED DURING INSPECTION): Potentially hazardous foods (naniamo bars) observed stored in display cooler at front service area measured at 9.0'C. Staff mentioned that the bars have been in the cooler since this morning. Potentially hazardous foods were discarded by staff during time of inpsection. Staff mentioned that this cooler will not be storing any potentially hazardous foods moving forward and that any bakery items which require storage of 4'C or lower will be placed in a functioning cooler.
Corrective Action(s): Ensure all potentially hazardous foods are stored at 4'C or lower at all times to prevent time-temperature abuse and to prevent growth of harmful bacteria and/or toxin production. Display items must be labelled "display only" to prevent sales of temperature abused foods.

Observation (CORRECTED DURING INSPECTION): Dishwasher measured at 0 ppm chlorine concentration during time of inspection. Staff replaced bleach bottle. Dishwasher later measured at 100ppm chlorine concentration with test strip at the plate surface.
Corrective Action(s): Ensure dishwasher is able to maintain 50-100 ppm chlorine concentration at the plate surface ensuring that dishes are adequately sanitized after each cycle and to prevent contamination.

209 - Food not protected from contamination [s. 12(a)]
Observation (CORRECTED DURING INSPECTION): Bag of flour observed directly on the floor in the dry storage area. Staff moved the bag of flour onto the shelf (at least 6 inches off the floor).
Corrective Action(s): Ensure all foods are stored at least 6 inches off the floor to prevent potential contamination.

304 - Premises not free of pests [s. 26(a)]
Observation: Fruit flies observed in dishwashing area and back storage area. Staff mentioned that management is aware of the fruit fly problem and replaces traps. One trap observed at the back/break room area.
Corrective Action(s): Place more traps around the back area to trap any existing fruit fly population. Pour vinegar water down the drains to kill any potential fruit fly larvae. Contact pest control if the problem persists and the fruit fly population does not decline.

Routine Inspection Conducted

1. Temperatures:
- 2-door glass cooler at back at 3'C
- 2-door stainless steel freezer at back at -19'C
- Domestic freezer at back at -18'C
- Sandwich cooler in service area at 3'C (top and bottom)
- Under-counter beverage cooler at 3'C
-Thermometers available in all cold-holding units

NOTE: display cooler measured at 9'C during time of inspection. Staff mentioned that the display cooler will no longer be used to store potentially hazardous foods and that those foods that are potentially hazardous will be labelled "display only" and will not be sold to costumers for consumption.

2. Sanitation:
- General sanitation of premises satisfactory during time of inspection
- Handwashing station in service areas supplied with liquid soap, paper towel, hot and cold running water
- Bleach sanitizer bucket (X1) and bleach sanitizer spray bottle (X1) measured at 200 ppm chlorine concentration with test strip
- Ice machine observed in satisfactory condition

3. Storage:
- All baked goods observed covered in front
- Separate tongs used for vegan items
- All food observed covered in coolers

4. Administration:
- Health permit visible during inspection

Reminder: ensure permit is posted in a conspicuous location on premises at all times near front service area
