Observation (CORRECTED DURING INSPECTION):
1. Buckets of meat being stored at room temperature. Product was still frozen.
2. Cooked chicken being stored at room temperature on counter. Temperature measured at 80.2C.
Corrective Action(s): 1. All uncooked potentially hazardous foods not being processed or sold right away should be stored at 4C or below. Move this inventory into a cooler. Correction required immediately.
2. All cooked and hot ready to eat potentially hazardous foods need to be stored at 60C or above or be stored in the fridge. Correction required immediately. Inventory was all sold in 45 minutes (5:45 pm).

For both infractions, if food is left in danger zone for more than 2 hours, it has to be discarded.

Observation: 1. Cutting board in poor working condition. Old mould can be observed growing on it.
2. Holes observed in dry wall in kitchen.
Corrective Action(s): 1. Discard equipment in poor condition and replace with new one. Correction required right away.
2. Repair holes in the wall. Correction required in 1 month.
