The following items have been observed:
-->Single prep cooler in kitchen is at 3.9oC (food temperature for cheese curds and sliced tomatoes); bottom compartment is noted at 5oC (air temperature). Temperature log has been maintained and monitored, all under 40oF.
-->Pizza cooler is measured at 3.0oC (left side) and 3.9oC (right side)
-->Foods at dry hot holding unit are all over 60oC
-->Screen door is in use at time of visit
-->Open bags of dry goods have been transferred to food grade containers
