Observation (CORRECTED DURING INSPECTION): Observed large fish thwaing at room temperature. The operator has noted that the large fish thawed inside a styrofoam container at room temperature overnight. This is not an acceptable method of thawing potentially hazardous foods. The fish was discarded at the time of inspection.
Corrective Action(s): Proper method of thawing of large fish would be:
1. Transfer frozen fish from a freezer to a cooler in advance so that the thawing takes place in a cooler at or below 4C
2. Put fish in a water proof packaging and thaw under cold running water or submerge in cold water & change the water every half an hour.

**Large fish may be frozen on the inside, but the surface temperature may enter danger zone temperature (between 4C-60C) during improper thawing.

- Rocks that used to support display cooler have been replaced with structure that is durable and cleanable
- High temp dishwasher reached >71C at plate's surface
- Foods are stored in a manner that prevents cross-contamination
