Observation: 1) Prep cooler under the counter top drink cooler was at 9C.
2) High temperature dishwasher was leaking water into a buspan.
Corrective Action(s): 1) Service or adjust or replace cooler and ensure it can maintain 4C on a consistent basis.

Comments

-Walk-in cooler was at 4C.
-Walk-in freezer was at -18C.
-Sandwich prep cooler was at 4C.
-Under counter coolers (except for unit below counter top drink cooler) were at 4C or less.
-Hot holding units were greater than 60C.
-Temperatures are checked and recorded throughout the day. Staff are taking temperatures in both degrees C and degrees F - ensure staff are consistently recording temperatures in the same units.
-High temperature dishwasher had a final rinse temperature of 72C on the dish surface (minimum 71C required for proper sanitizing).
-Handwash stations easily accessible and supplied with hot and cold running water, liquid hand soap, and single use paper towels.
-Quats sanitizer pails changed every 2 hours and were tested at 200ppm.
-Quats sanitizer dispenser at the 3-compartment sink was at 200ppm.
-General sanitation satisfactory at the time of inspection. Ensure staff are properly cleaning the door seals of the cooler units - mould growth found in the door seals.
-Facility serviced by a professional pest control operator on a monthly basis - report indicates minor flying insect and ant activity.
-Washrooms clean and well maintained.
