Observation:
1) No sanitizer available at the time of inspection.
2) Dishwasher only reached 66C at the time of inspection
Corrective Action(s):
1) Ensure that a solution of 100ppm chlorine (5mL of household chlorine bleach in 2.5L of water) is available at all times. Store wiping rags in this solution when not in use. Staff made solution at the time of inspection.
2) Wash your dishes in the dishwasher and manually sanitize using a 200ppm chlorine solution and air dry afterwards. Repair your machine so that it can reach a minimum of 71C at the final rinse cycle.
