Met with kitchen Manager, Moe, and we discussed the following: - cleaning and sanitization schedules are in place - food safety training in place - daily temp logs are up to date and including hot and cold holdings - low temp dishwasher - supplied at the final rinse with bleach and measured at 100ppm. - back/receiving area has been free of dirt and dust ( thank you ) - quat has been measured at 200ppm ( in the spray bottle ) First floor sub-kitchen has been inspected at this time.
