*Consider replacing the door seal/gasket on the under-counter cooler across from the kettle. Debris build up noticed. * Ensure to only use OstroSan sanitizer at 200 ppm for food contact surfaces such as stainless steel prep tables and cutting boards etc. Walk-in cooler at 2.9 degrees C. Walk-in freezer at -20 C Sliding door cooler below 4 C. Upright cooler below 4 C. Upright freezer at -20 C. Hot holding of soup> 60 C. Dishwasher final rinse tested 100 ppm chlorine at plate surface. OstroSan Sanitizer (Quats) in the spray bottle tested 200 ppm. Liquid soap and paper towels available at all hand sinks. Food handling practices satisfactory. Temperature logs are up to date. General sanitation is satisfactory.
