Observation (CORRECTED DURING INSPECTION): 1. Dishwasher in use while it is unable to dispense sanitizer at 50 ppm.
2. No sanitizer available in the front area.
Corrective Action(s): 1. Fill up one of the sinks near the dishwasher with 100 ppm bleach sanitizer. Wash equipment in the dishwasher and manually sanitize in the bleach sanitizer for 2 minutes. Allow equipment to air dry before using. Test the sanitizer with test strips and ensure concentration stays at 100 ppm. Remake the sanitizer if the concentration falls below 100 ppm.
2. Prepare 100 ppm bleach sanitizer in a spray bottle to use in the front area.
