Observed pink mildew debris buildup inside the ice machine.

Observed the following:
1. Ice scoop stored on top of ice machine without a separate clean container. Top of ice machine was noted to contain dust and other debris which may potentially transfer onto the ice as the scoop is used.
2. Observed an uncovered bucket of turkey broth in the walk in freezer stored below other products and containers.
3. Observed scoops submerged in the dry goods containers, such as flour.
Health Rationale:
1. An ice scoop stored in a n unsanitary manner increases the risk of potentially contaminating the ice, increasing the risk of potential injury or illness when consumed.
2. An uncovered container of food stored below increases the risk of contamination from containers or storage above.
3. Submerged scoops increase the risk of potential contamination as staff may touch the food as they reach in, leading to potential foodborne illness.

1. Ensure the ice scoop is cleaned and sanitized and placed in a clean container to protect ice form contamination.

Observed glasswasher in bar area measuring at 0ppm iodine during the final rinse cycle.
Glasswasher was not in use at the time of inspection, operator stated that facility will be in use on May 6th.
Service technician repaired unit at the time of inspection. Verified with a test strip at 12.5ppm iodine.
Health Rationale:
Glasswasher not in good working order increases the risk of glasses not being properly washed and sanitized, which may lead to potential pathogen survival and potential foodborne illness.
Corrective Action:
Ensure glasswasher is serviced such that it can sanitize glassware at 12.5 - 22ppm iodine. Do not use equipment until it is in good working order.
Directed operator to use low temperature dishwasher in the kitchen if unit is not repaired by May 6th.

Walk in cooler measured at 3C.
Back storage area:

Dishes and utensils are clean and covered.
General sanitation of area is satisfactory.

Two sanitizer spray bottles measured at 200ppm QUATs.
Lo temp dishwasher measured at 50ppm chlorine on plate surface during final rinse cycle.
Cutting boards and utensils cleaned and sanitary.
Prep sinks supplied with hot/cold running water and sink plugs.
Dry goods stored in pest proof containers and are minimum six inches off the floor.
General:
Ventilation hood and cook line clean and free of excess grease and food debris.
Health permit posted in conspicuous location.
Operator has valid FoodSafe Level 1 equivalent - Exp. March 30, 2028.
