Observation (CORRECTED DURING INSPECTION): Cooked foods were cooling in large containers (11.3L) to be transferred into the cooler.
Corrective Action(s): Ensure foods are rapidly cooled in shallow containers/trays to allow foods to rapidly cool from 60C to 20C in 2 hours or less and from 20C to 4C in 4 hours or less to prevent the growth of pathogens and/or the formation of toxins.

Comments

-Front beverage cooler was at 4C.
-Upright freezers were at -13C and -18C.
-Food in hot holding table is time tracked and reheated once (within 2 hours) and foods are discarded if not sold 2 hours after reheating. Ensure a record of when the food was placed in the hot holding unit is also documented.
-Hot holding of rice was greater than 60C.
-Cleaning and sanitizing carried out in the 2-compartment sink. Bleach and sink plugs available.
-Handwash stations accessible and supplied with hot and cold running water, liquid hand soap, and single use paper towels.
-Bleach sanitizer pail and spray bottle tested at 200ppm.
-Mandolin slicer was properly disassembled for cleaning and sanitizing.
-General food storage practices good at the time of inspection. Foods stored off the ground and covered.
-General sanitation good at the time of inspection.
-Facility serviced by professional pest control (offered by mall management).
-No signs of pests noted at the time of inspection.
-FOODSAFE Level 1 valid until March 01, 2028.
