302 - Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
Observation (CORRECTED DURING INSPECTION): Two spray bottles labeled as quats sanitizer were measured at 0 ppm and 100 ppm quats (required: 200 ppm quats for food contact surfaces, per product label).

Note: Quats sanitizer concentrate bottle was empty, it was stated that it had run out today and there was no other quats sanitizer concentrate available on site.
Corrective Action(s): Above-noted spray bottles emptied. A small bucket containing prepared quats sanitizer at 200 ppm was used to refill the spray bottles. A bleach water sanitizer was prepared at the three-compartment sink at 100 to 200 ppm chlorine bleach in the absence of other sanitizers (e.g. quats).

Ensure sanitizer is always available at safe and effective concentrations for food contact surfaces, equipment, and utensils.
Quats: 200 ppm or per product label requirements for food contact surfaces. (test strips available).
Unscented chlorine bleach: 100 to 200 ppm chlorine bleach.

Observation (CORRECTED DURING INSPECTION): Soap not available for back area hand sink.
Soap dispenser blocked by jugs for front area hand sink.
Corrective Action(s): A stand alone liquid soap pump was provided for the back area hand sink.
Obstructing items removed from in front of the soap dispenser.
Ensure all hand washing stations are accessible and supplied with hot and cold running water, liquid soap, and paper towels at all times in order to faciliate proper hand washing.

**Relocate jug storage area or relocate front area soap dispenser. Discuss with EHO prior to relocating to ensure new proposed location is suitable.** Date to be corrected by: November 17, 2023.

Equipment and utensils stored in sanitary condition.
It was stated that in use equipment/utensils are washed and sanitized at least every two hours.
No signs of pest activity observed at time of inspection.
FOODSAFE requirements met. Certificate for staff on site valid to July 28, 2028.
Permit posted at front.
*Front prep cooler at 5 to 6 degrees C at time of inspection. Cooler appeared to be in defrost. Ensure cooler is capable of maintaining 4 degrees C or less; monitor and adjust/service as necessary.
