Observation: Owner has covered shelves in walk in cooler unit as directed by EHO however tacks have been used on top of and on underside of shelves. Health Inspector was easily able to knock one tack out. Multiple containers of food items are left uncovered in cooler units. These tacks have the potential to fall into uncovered food items inside cooler unit. Tacks could easily be consumed by customers if left undetected in food items. These tacks have the potential to cause serious harm to a customer.

Corrective Action(s): 1) Remove tacks from all shelves IMMEDIATELY.
2) Cover all food items in cooler units.

Observation: Back door propped open during inspection. CORRECTED DURING INSPECTION - Closed by staff.

- Coolers achieving temperatures of less than or equal to 4 degrees Celsius
- Freezers achieving temperatures of less than or equal to -18 degrees Celsius
- Hot Holding achieving temperatures of greater than or equal to 60 degrees Celsius
- Dishwasher achieving final sanitizing rinse of greater than or equal to 72 (77.1) Degrees Celsius at the dish
- Sanitizer solution in use throughout food preparation areas and at concentrations of greater than or equal to 200ppm Chlorine - EXCELLENT WORK!!!
- Ice machine and scoops in good sanitary condition
- Raw meat stored away from Ready to Eat food items
- Hair restraints in use
- Vegetable choppers in good sanitary condition
- All containers used to store lids/utensils/etc. in good sanitary condition
