Observation (CORRECTED DURING INSPECTION): 1) Kitchen hand sink's liquid soap dispenser was too far away from hand sink, and paper towel dispenser was not supplied.
2) Hand sink in front server area was missing liquid soap and paper towels.
Corrective Action(s): All hand washing sinks must be properly supplied with easily accessible liquid soap and paper towels.

Observation (CORRECTED DURING INSPECTION): 1)Raw chicken stored above vegetables in walk-in cooler.
2) Bags of onions were stored directly on the floor by the back door.
3) Some food items stored in coolers were uncovered.
Corrective Action(s): 1) Store all raw meats below ready-to-eat foods and vegetables.
2) Do not store food and food-related items directly on the floor.
3) Ensure all food items are stored properly covered.

Observation: Grease and food debris accumulation noted on ventilation canopy filters, on top of dishwasher, and on walls and floors around cooking equipment.

Observation: Liquid soap dispenser for kitchen hand sink has been relocated to be above food prep sink.

Comments

*Ensure all hand washing sinks are supplied with liquid soap and paper towels at all times (see violation code 401 above).
- High-temperature dishwasher reached above 71C at the dish surface during sanitizing rinse cycle - good.
- Bleach sanitizer solution available at 100 ppm. Quats sanitizer solution also available, tested to be at 200 ppm.
- All coolers were measured to be at 4C or colder
- Freezer temperatures were satisfactory
- Rice cooling on stainless steel, shallow pans at time of inspection. Measured to be at 64C at the time. Reviewed cooling procedures - OK.
- Ice machine currently not in use. *Ensure ice is available for cooling curries
- Reviewed thawing procedures - OK. Thaw frozen foods in the cooler overnight, or under cold, running water.
- Dry storage areas satisfactory
- Pest control in place (monthly). No signs of pest activity noted at time of inspection.
