306 - Food premises not maintained in a sanitary condition [s. 17(1)]
Observation: 1. Grease buildup noted along the fume hood. Grease noted collected at the edge of the fume hood that could potentially drip onto the stove top and cookline below to cause a possible fire hazard or contamination to food.
2. Debris and grease noted on the floor along the cookline and behind equipment in the kitchen.
Corrective Action(s): 1. As per operator, the fume hood was cleaned 2 weeks ago. The baffles were removed, soaked in detergent and water and ran through the dish machine for cleaning. Please consider increasing the cleaning frequency of the fume hood if the current cleaning schedule cannot accomodate to prevent grease buildup. At a minimum, wipe down the edge of the fume hood to avoid potential collecting of grease that can contaminate food or cause a fire hazard.
2. Please pay attention to the hard to reach areas along the cookline and behind the equipment. Move the equipment out of the way if possible and clean and sanitize the abovementioned areas. Any type of buildup and grease serves as a food source for pests. Removing their food source is one of the ways to deter pests from harbouraging in your facility.
Date to be corrected by (#1 and 2): Ongoing cleaning is required. Must be improvement on your next routine inspection.

Observation (CORRECTED DURING INSPECTION): **This is a repeated violation**
Improper scoops (containers with no handles) still being used and stored within bulk food container in the dry storage area - 3 noted.
Corrective Action(s): Issue was corrected at the time of inspection. Operator removed the 3 improper scoops. Proper dispensers with handles were actually available for these bulk food containers, but for some reasons were put away and not used. Please use only the proper dispenser with handle and store either on top of the container or within the bulk food with the handle not in contact with the food.

Follow-up inspection conducted for inspection report# KLAI-CCZSFP and KLAI-CDPTEV
Did not observe food being stored on the floor for preparation during the inspection.
Significant improvement noted on cleaning the mouse droppings observed from the last routine and follow-up inspections.
Handwash sink equipped with hot and cold running water, liquid soap and paper towel.
As per operator, pest control company had came twice since the last follow-up inspection. Pest entrance points to the facility have been sealed off. Kitchen back door has now been equipped with a self-closing mechanism that will automatically close when someone enter/ exit to deter pest entry.
New high temperature dish machine has been installed as leaking was observed with the previous low temperature dish machine. High temperature able to reach 71.9C on the plate level during the rinse cycle.

No follow-up required at this point. Please continue to clean and sanitize the mentioned areas as noted in the violation. Must note improvement in overall cleanliness by next routine inspection or progressive enforcement actions may ensue.
