Observation (CORRECTED DURING INSPECTION): Chili is the only food that operator keeps for leftover. Operator pours leftover in a pot, cover, and place in cooler after awhile.
Corrective Action(s): Cooling foods must be done properly. Do not cover pot while cooling (hot air needs to come out), 2 hours at room temperature (20oC to 4oC in 2 hours), then place in cooler for further cooling.

Observation (CORRECTED DURING INSPECTION): Discussed manual dishwashing procedures with staff. Staff sanitizes dishware after washing and rinsing; however, the time in sanitizer is not long enough (only 30 seconds).
Corrective Action(s): Dishwashing procedures must be done properly:
a) wash in soapy water
b) rinse in hot clean water
c) soak in sanitizer for 2 minutes OR spray with sanitizer for bigger equipment
d) air dry
